This is the time to harvest olives in Croatia,
to make extra virgin quality of olive oil. Basically collect when olives are
still green and just starting to turn black, the acidity will be very low and
oil will taste light and fresh, with a spicy note.

There had been a few heat waves this
summer, plus heavy rainfall in early September, this adds up to a fantastic
olive year, olives are healthy and oil level good.
With around 8 persons working full day, can manage to collect around 900kg of olives, at about 10% oil level, that amount to only 90
liter of olive oil !
Good quality olive oil is great to eat with fresh soft bread.
