Raw asparagus with ham




The asparagus patch is still producing a meal every few days. This will last until 5 June, when we have to stop cutting and let them grow tall to produce nutrients for next year's growth.

When asparagus is so fresh, I like to have them raw, a good prebiotic to feed our gut microbes.   

Use a peeler to thinly slice asparagus, simply mix with olive oil and salt is tasty enough. With the asparagus juicy, mildly sweet and crunchy. 
In this case, I used ham instead of salt for a more filling dish.
