Acacia cream sauce

Acacia is flowering now, beautiful bunches of cream white flowers, can see them from far away. Bees fed on these flowers to produce the pale yellow acacia honey from the forest.

A traditional dish in spring, is to add acacia flowers into pancake mix to be cooked together. I have not tried this yet, decided to make a cream sauce to know how the flower tastes like first. 




Being a tree flower, the texture is a bit thicker than herb flowers, so not that great to eat them raw in salad.

Into a cup of cream I added a handful of flowers, a teaspoon of sugar and cook until soft, couple minutes, then left to cool down.
The sauce has a mild chestnut like nutty fragrance, quite pleasant.
