Crab apple bay leaf ice cream

 
Last year was a fabulous fruit year, very good harvest for all fruits, I made a lot of jam in order to keep them. It is now time to turn some into ice cream to enjoy during hot afternoon. 

Crab apple bay leaf ice cream

I read this recipe from "La Grotta Ice" recipe book, a number of interesting flavor combinations, like apple flavor with bay leaf.
I modified the recipe using crab apple jam instead of freshly cooked apple, custard made from coconut milk and no addition of cream. Crab apple has a lot of pectin and fiber and is enough to give a rich mouth feel without needing cream. 
Indeed the ice cream has a mild spicy aroma of bay leaf and this add a touch of sophistication to plain apple ice cream.

1. Prepare 200ml of custard using coconut milk, yolk and sugar.
2. Steep 4 pieces of bay leaves in the hot custard, leave to cool.
3. Mix cooled custard (remove bay leaves) with 400gm crab apple jam, fridge for a few hours before churning into ice cream in the machine.
