Salted nectarines

Collected a basket of split nectarines, still hard and sour, decided to salt and dry them, like making Asian salted plum (梅), to be eaten in hot summer to replenish electrolyte.
I used salt and Nigari, a magnesium rich crystal used in making tofu, for a balance of Sodium and magnesium intake.
Salted nectarines

pickling ingredients, based on weight of nectarines used:
2% salt
2% Nigari
5% brown sugar
drying salted nectarines

Mix well with cut up nectarines, salt for 24 hours, turning every few hours. Place inside Fruit Drier machine and dry at 60˚C, around 15 hours.
