Sourdough ginger muffin




I got sourdough starter from a friend that has been in use for over 2 years, it has a nice sweet sour alcoholic smell.

Other than making bread, I used it to make muffin, which ends up with a mild sour taste and a chewy, more bread than cake like texture.

1. Mix half a cup of sourdough starter with 200gm flour and 200gm water and rest at room temperature for a day, until bubbly.

2. Add 150gm almond flour, 100gm melted butter, one egg, 30gm honey, 30gm brown sugar, 1 tbsp fresh ginger juice or powder, a big pinch of salt. The mixture should be like a thick paste.

3. Spoon into paper lined muffin tins to 2/3 full, rest for an hour or two until risen 1/3 more.

4. Bake at 200˚C until brown, around 20 minutes.
