Pomelo salad with dry shrimp, Siberian pin nut and coriander flower



As temperature starts to go up, it is pleasant to have fruit based salads. Pomelo is a good choice as it is juicy yet firm and goes well with different flavors.

Siberian pin nut is more tasty than normal pin nut, and coriander flower has more intense aroma than the leaves.
1. Prepare pomelo fruit into bite size segments.
2. Dry toast Siberian pin nut in a pan until light golden, toast dry shrimp until fragrant.
3. Add some colourful vegetable, cut into small cubes, here I used the stalk of kale after using the leaves in soup, can also use bell pepper, carrot etc., blanch to soften.
4. Prepare a dressing with lemon juice, honey, soy sauce, olive oil and as much chili as you like.
5. Mix all ingredients together just before serving.
