Baby lamb's liver with spring onion

This is a treat, it is so tender and mild in flavor, got it for free while buying half baby lamb, it has been frozen waiting to be used.
1. Semi defrost, when it is still hard but able to be cut, thinly slice the liver.

2. Boil a small pot of water flavor with ginger, white pepper and salt, blanch a few slices of lamb's liver at a time, take out immediately when colour changed.
3. In a pan, sweat spring onion until soft and sweetness come out, season with soy sauce, mix in blanched lamb's liver and serve.
