Mala cucumber noodle


 
I need to eat cucumber often, this variety Poona Kheera is really productive. As the texture is firmer than most modern variety of shop bought cucumber, they are great to be used as ' noodle'.

Mala cucumber noodle

1. Use julienne peeler to shred cucumber, season with salt and pepper. Rest for an hour for liquid to come out.
2. Squeeze out most liquid, mix with a sauce made with sesame paste (or any nut butter), soy sauce, brown sugar, as much Sichuan pepper powder and chili as you like. Add fresh coriander leaves for colour and fragrance.
