Went to the fish market in Rovinj, Croatia
to buy what is fresh of the day. There are a lot of seabreams, big and small,
and a few John Dory, got one each. Also saw a box of baby cuttlefish, bought
half a kilo for 3 euros.

Need a bit of patience to clean the
cuttlefish, to remove the back bone and content.
I simply blanch them in a broth of ginger
and salt for a few seconds, just when they turn white and stiffen. They are
crunchy and sweet, beautiful.
