Roast duck



As weather is cooling down fast, it is nice to stand in front of the barbecue to stay warm.

The spit roaster is turning a duck, seasoned with miso, soy sauce, brown sugar, 5 spices powder and dried mandarin peel inside, skin is rubbed with salt and picked with toothpick, dried on a rack in the fridge for 2 days.

When duck is nearly cooked, brush diluted honey on the skin for flavor and faster browning.
