Lamb Navarin



My version of lamb Navarin, in my mind, is basically lamb in a sauce with vegetable. I used cutlets here but can use other parts suitable for longer cooking. 


1. Sear cutlets at high heat to have both sides golden, take them out to rest.
2. Sweat onion and garlic, then vegetables, I used sweet potato and turnip here, cook until soft, add tomato sauce, season with soy sauce, pepper and brown sugar.
3. Place cutlets in the sauce to warm up, add some green leaves/herbs just before serving.
