The ingredients used are
simple, call it a feast because of the richness in flavour: the fragrant of lamb
with cumin, sweet sour juicy tomato, fresh herb, and the texture of crispy
light baguette.
1. Cut lamb cutlet (need
the fat) into small pieces, season with cumin seed, soy sauce, pepper and brown
sugar.
2. Sear lamb in a hot pan
until the edges are slightly charred.
3. Remove skin of tomatoes,
cut into cubes, season with salt and olive oil, if not sweet enough add brown
sugar, if not sour enough add vinegar. Mix well to let juice to come out. Add a
handful of fresh herbs (basil/coriander) just before serving.
4. Re-heat a baguette to
have the crust crispy.
