Steamed eggplant with shrimp and goji berry |
I really like steaming eggplant, instead of frying
then stewing in a rich sauce, not just steaming retains the more natural pale tone,
you can still taste it's mild flavor too.
1. Cut eggplant into cube, can add other
vegetables like potato, carrot or cauliflower to have a better texture
combination.
2. Season with salt, white pepper, liqueur
and olive oil, mix well.
3. Sear dry shrimps until fragrant, add to
vegetables with a handful of dry goji berries, mix well, steam until cooked,
around 20 minutes, mix well before serving.
