Dexter beef shin (osso buco) stew |
This week ordered organic Dexter beef shin,
it is a smaller breed of cow and the shin is smaller than normal. I decided to
stew it with mirepoix, mix vegetables cut into cubes, only, without adding
tomato paste and flour, in order to enjoy rich Dexter beef flavor, it is
delicious.

1. Bake beef shin in hot oven for 20
minutes to brown it.
2. Cut carrot, celery, onion, turnip,
ginger, garlic into small pieces, sweat until fragrant, deglace with a cup of white wine.

3. Add baked shin into the pot, with all
the juice from the baking tin, add enough water to cover, season with salt,
bring to boil then cover with lid and simmer until soft, around 3 hours.

4. Some of the vegetables will dissolve and
sauce should thicken naturally. Serve with some cut up celery leaves on top.
