Ox tail stew in rich star anise sauce

I stewed Dexter ox tail with star anise, soy sauce and vinegar, the resulting sauce is rich, dark and gelatinous, meat is juicy and fall off the bone, a good result.
1. Prepare mirepoix using onion, carrot, celery, garlic and ginger, sweat until soft and fragrant.
2. In high heat, add ox tail, mix well with the vegetables, deglace with white wine, add water to cover ox tail, add soy sauce, vinegar, brown sugar (1:1:0.5 in volume, can add less and adjust later on), 5 pieces of star anise, a piece of cinnamon stick. Bring to boil for 10 minutes, simmer at very low heat for 3 hours, flip ox tail over if they are exposed.

3. Rest overnight, skim off the oil on top (keep to use in cooking other dishes), adjust seasoning, simmer for another hour until soft.
