Sticky rice flour vegetable pancake


 

This pancake is crispy outside, gooey inside with tasty vegetables, a wonderful combination, guarantee hard to stop eating them.

1. Cut turnip/daikon and carrot (or any other veg) into thin strips, season with salt and rest for half an hour to soften.

2. Mix same quantity of sticky rice flour and water (100gm each with around 2 cups of veg), mix into a thick pourable paste, mix with vegetables.

3. In a non stick pan, with oil covering bottom, add a ladle of veg with paste, spread into a thin round, sear at medium heat until both sides golden and crispy.
