Pear compote

 

There are a few cordon pear trees  next to the barn wall, with fruits maturing well with the extra warmth from the wall. Very pleased that the fruits have very little blemishes and there is no wasp attack, a good aspect of growing fruits in Ireland.

They are still hard now but can see that a lot will become ripe very soon. So decided to pick some, cook in a mild citrus syrup, to start enjoying home grown fruit.

1. Make a light syrup using orange and lemon juice, sweeten with honey or sugar.

2. Boil pear, peel and cut into quarters, for 5 minutes before bottling. Only last a few days with this low sugar level.
