Pork shoulder in Sichuan pepper sauce

 

A favorite cut with flavorful dark meat and some fat, quick cooked to check its taste, in a mild Sichuan pepper sauce.

1. Season pork shoulder steak with salt for half an hour.

2. Warm a handful of Sichuan pepper in oil to extract flavor, remove and put into a sauce of miso, soy sauce, honey and rice wine.

3. Sear pork steak both side golden, add sauce and cook for a minute both sides.
