  Apple cardamom cream pudding with crumble


 

Learning to use cardamom in cooking, the fragrance is unique and refreshing, other than in stew, it actually works well in dessert. This time with green apple, not overpowering but does give it a pleasant aroma.

 

Cooking apple 5

sugar

cardamom 15 pieces

pinch of salt

 

2 eggs

sugar

250gm sour cream or thick Greek yogurt

zest and juice of one lemon

2 tbsp cornstarch/oat flour

pinch of salt

250gm cooked apple sauce

 

mix nuts and seeds (optional)

30g butter

2 tbsp flour

1 tbsp sugar

pinch of salt

 

1. Peel and cut apple into pieces, pound cardamom to remove shell then into fine powder.  

2. Cook apple with cardamom powder, sugar to your taste, with 30gm water and a pinch of salt until soft. Cool down.

3. Beat 2 eggs, mix in the rest of the ingredients and cooled down apple sauce. Any left behind apple sauce will be served with the puddling.

4. Pour into buttered baking dish, bake at 170˚C until set, around 40 minutes, result is like a creamy Creme Brulee.

5. Roughly chop mix nuts, mix with sesame, pumpkin seed, flour, sugar salt and butter. Squeeze into small handfuls and place on baking sheet, bake at 180˚C until golden.

6. Serve pudding with crumble on top and apple sauce on the side.
