Can't face eating Pollock the same way 3 times, so turn part of it into fish balls. Pretty easy to make with blender, the key is to add water to form a smoother lighter texture.
1. Cut Pollock into chunks, add handful of parsley, water (roughly 1/3 volume of fish), season with salt, white pepper, blend until form a ball.
2. Poach in simmering water or fish bone broth until middle of fish ball is hot.
