Long steamed lamb neck and pork belly

Again use the steam program in the oven to cook many portions at the same time, so easy, only need to reduce the sauce to thicken before serving.

1. Season lamb neck with salt, pepper and 5 spices powder for a day.

2. Place in baking dish, sprinkle cardamom and fenugreek around, add 1/2 cup rice wine, soy sauce and brown sugar to flavor the sauce. Fenugreek gives a lovely smoky honey aroma, a new spice I am learning to use.

3. Steam until soft, around 3 hours turn over every hour.

 

Pork belly (or ribs) with star anise

1. Cut pork belly into cubes, season with soy sauce, brown sugar, minced ginger and 5 spices powder for a day.

2. Place in baking dish, add a few star anise around, 1/2 cup of rice wine.

3. Steam until soft, around 3 hours, turn over every hour.
