Pork neck with spicy mango sauce 
Once in a while I fancy the look and flavor of juicy mango, and will be tempted to buy it, grown in Spain. Not as tasty as those from the Philippines, but fine to used in a dish, especially to balance the spicy flavor.
1. Season pork neck with soy sauce, salt, brown sugar and pepper.
2. Sweat leek until soft, sear pork both sides golden.
3. Pour in any remaining marinade, add rice wine and simmer until pork is cooked through.
4. Add chili and garam masala, then mango in slices, quick stir to mix and serve.
