Haddock roe is in season, have to buy at least 1kg, so a lot to eat, and try to cook in different ways.

The first is wash, dry and salt, keep in the fridge to release some water.
The simplest is to cut the sack of roe into halves, pan sear until golden, like cooking sausages.

Or break the sack, mix with egg and flour, and cook like pancake. I like it golden and slightly crispy.
