On the way down from Donegal, went round to a shop near Sligo where they have good size lobsters. Bought 2 for us and some for neighbours.
Steamed the nearly 1kg each lobster for 8 minutes for the tail and small claw, 16 for the big claw and head. Rest the tails for another 5 minutes to warm through to the centre, perfect tender medium rare.
The big claws were left for lunch the day after, warmed with butter, and served with cherry tomato with olive oil and basil, divine.
