My fermented honey lemon cordial is similar in spirit to Limoncello, have a bright lemony sweet flavour, sunshine in a glass.
Super easy to make (compare with Limoncello), cut organic lemon into thin slices, mix with raw honey. Cover with cling film to let air out, as honey will draw moisture out of lemon and ferment.
What is amazing is that after a week, honey also draws out the bitterness from the white pith. After 3 months, that bitterness is gone, digested by the fermentation process!
This lemony sweet cordial can be enjoyed on its own, diluted with water , or with gin, vodka, whiskey as a digestive.
