First to harvest this new year is Yacon, just 2 plants and got a big pile of tubers. Also saved the crowns to grown on, with no pest, no disease, it is the easiest to veg grow.
Like to have it raw as fruit, crunchy and mildly sweet, or pickled in miso or soy sauce as accomplishment, can also cook it and still stay crunchy.
