Got a big bag of fresh mullet roe. I can’t wait and used a couple immediately for a simple lunch.
Remove skin of roe, flatten and sear until golden and firm, mix with stir fried vegetables.
Looks a bit like grated cheese on veg.
An easy to use protein source, and super nutritious too.
I am going to salt and dry the rest for a few days, then dry at 70˚C and keep in freezer.
Should be nice on pastas and pizzas, and enhance flavour of veg dishes.
