A common winter vegetable, with beautiful deep red ribs. I know Italians use them as salad, but it is too bitter for my taste, I prefer a cooked hot dish.
1.Sweat onion/garlic/leek until soft.
2.Cut radicchio into segments with the base attached, sear at medium temperature, sprinkle a little salt and brown sugar, with the lid on.
3.Turn over and repeat for all the sides, season with soy sauce.
