Made a mouse cake using Greek yogurt instead of cream for dinner with friends.
The ratio of homemade raspberry coulis to yogurt is 2:1, and 2% gelatine. It is less creamy than normal mouse cake but lighter to digest after a full meal. 2% gelatine is good for just set consistency, not rubbery.
