On researching this trip, I am surprised to see so many Michelin listed small eats in Tainan. We made a point to visit as many as possible. Some open from 4am until sold out, mostly by 11am, hence we have to make use of breakfast to try some of the specialties, even if it is meat dishes.
The whole place is a foodie’s paradise, so many varieties of local meat, fish and fruits and breads/buns to try, all made with good standard.

水晶宮市場阿濱海產燒物 Met this fisherman at the market selling his line caught
fish and home cured mullet roe. He is very friendly and explained how he
prepared his mullet roe. Also mentioned that he is a chef too and cook
seafood on Thu, Fri and Sat evening at the market. We went to try, and
end up having a wonderful feast of freshest local seafood, perfectly
cooked, at a very good price.
