Peru - Cuy


 Cuy, guinea pig, is traditionally farmed in Peru as one of the main meat source in mountain community. They have a diet like pig, eating grass, nut, vegetable and kitchen waste. They grow fast, normally eaten when 3 months old, and could reproduce when mature in 4 months time. 


 Guinea pig is prepared like chicken, killed, then dipped in hot water to plug the feather. It tastes like a cross between young chicken and suckling pig, juicy and tender. The most common cooking method in Peru is deep fry, the cleaned cuys are air-dried for 2 hours, so that the skin crisp up nicely. It could be be use in any recipe replacing chicken.
