Monkfish liver

Tried this dish in Restaurant Les Enfants Rouge in Paris, a very smart way to present monkfish liver.

Just cooked with the center still pink, monkfish liver stays soft and creamy, served with picked vegetable and raspberry vinaigrette, a good dish.
