1. Cut 8 medium size tomatoes into cubes,
cut a clove of garlic into slices, cook in a tbsp of olive oil with 5 small dry
chilies.
2. Stir to reduce to a thick paste, season
with salt, brown sugar and vinegar to your taste, sieve and serve.
