Smoked egg


I like to have soft boil egg with a half set, jelly like yolk. It is not easy to have a consistent result when cooked in boiling water.
With my low temperature cooker, I could set the water bath at 67˚C and cooked the egg for 45 minutes to get the perfect jelly yolk texture, the egg white is extremely soft and delicate.
To go a step further to make one of my favorite egg dish, smoked egg, I need soft boil egg with firm white and jelly yolk in order to handle the peeled egg in the smoker.

Eventually I figured out that this need to be done in 2 steps. First cook egg in boiling water for 4 minutes, then soak it in 67˚C water bath to soft set the yolk. Then remove shell and lightly smoke egg, cut into halves to serve.
