Fig lemon ginger jam


I like my fig jam to retain the shape of figs, sweet sour and slightly spicy, much more pretty and tasty. To do so I need a 2 steps process.

1. Cut 2/3 figs into halves and half dry in a fruit-drier.

2. Chop up 1/3 figs, cook with lemon or grapefruit juice, ginger slices until liquid.

 

3. Add the half dried figs and bring to boil, cover with lid and let it cool down, more pectin will be released from the dry figs.
