I like my fig jam to retain the shape of figs, sweet sour and slightly spicy, much more pretty and tasty. To do so I need a 2 steps process.

1. Cut 2/3 figs into
halves and half dry in a fruit-drier.
3. Add the half dried
figs and bring to boil, cover with lid and let it cool down, more pectin will be
released from the dry figs.
