Steam eggplant with dried shrimp & fennel seed


Recently I find steaming eggplant more delicious compared with normally fried in oil first cooking method. First of all, after steaming, eggplant remains white, more appetizing look, even though the flavour is mild, it is tasty in its own way. 
 
Steam eggplant with dried shrimp & fennel seed- before

1. Sweat onion and bell pepper until golden, add cut up dried shrimp and stir-fry until fragrant.
2. Cut eggplant into cubes, place in baking dish, mix with fennel seed, season with salt and white pepper, put onion/shrimp on top, drizzle a little sesame oil. Steam for half an hour.
