Even though I have
planted cultivated blackberries where the berries are much bigger than wild
ones, and there have been constant harvest since June, I still cannot resist
going out to collect wild ones from the hedge.

Wild blackberry is small,
but the taste is richer and has a pleasant herbal note, which is lost in the
cultivated varieties.Wild blackberry coulis is great with vanilla ice cream or yogurt or plain sponge cake.
1. To make coulis, I
add brown sugar, stir well to soften the berries for a couple of hours.
Bring it to boil and let it cool down in the pot.

2. Pass through a
juicer or sieve to remove seeds, which is much harder than cultivated
ones. Wash the seed with a little water and pass again to extract maximum.

3. Bring to boil and
taste that it is sweet enough.
