I like the langoustine head to be well
cooked to enjoy the tomalley, but the body still juicy tender just medium cooked. It is
hard to achieve this by cooking whole by boiling or steaming.

The way round is to tie the tail up to hang
from a stick, place in a boiling broth, that submerge the head part only, with
the body in mid air in the steaming pot (lid ajar), for 3 minutes, perfect
result.
