Bay branch grilled pork



It is a method used in Madeira for cooking meat on barbeque, as bay tree is native in that country and grows everywhere. The branch also infuses the meat with bay aroma.

Bay branch grilled pork

1. Cut branches from bay tree and remove all leaves.
2. Season pork shoulder with half a cup of yogurt, miso, soy sauce, brown sugar, 5 spices powder and garlic. Use bay branches to skewer meat and rest for a day.
