Stir-fry squid with spring onion




In the evening in autumn, it a common to find fishing boats out in the sea with bright spot lights on, they are catching squids So you know the squids in the market the next morning will be fresh. 

Stir-fry squid with spring onion, Rovinj, Croatia

1. Remove skin and dry squid well, score the outside and cut into thick strips.
2. Cut ginger and garlic in to thin slices, spring onion into 2 inches strips.
3. Cook ginger, garlic and spring onion in oil until soft and fragrant, push to the side and place squid in the middle of pan, spread out evenly and only turn when they curl up.
4. Add a couple tablespoons of soy sauce to finish, for flavor and colour.
