The sardine in Croatia is the small
Mediterranean variety, not the oily big ones in the Atlantic coast. Frankly without much oil
it is not very tasty, the best way is to pan fry them until the skin is
crispy.

Dry sardines, sprinkle a little flour and
salt on top, sear at medium heat until golden both sides.
