Cool vegetable soup



This summer, I like to make vegetable soup for lunch. First, this is a good way to use up mix vegetables, and second, it is good to drink more liquid in the form of soup. 

cucumber, zucchini, potato, dried shrimp cumin soup


1. I like to make the soup base from dried shrimps or ham or miso, to add a umami taste.
2. Add cut into cubes or shredded vegetables like cucumber, zucchini, potato, beetroot, beans, okra, carrot etc, bring to boil, season with salt, white pepper and cumin, simmer until soft.
3. Add fresh herbs just before switching off heat. Cool to body temperature before serving.
