After a week away, which happened to be a
very sunny week, came home to find a lot of mature cucumber Poona Kheera. In a potluck
dinner, I prepared this dish that manage to use up a lot of them.
Cucumber noodle in nutty curry sauce |
1. Peel skin off cucumber, use a julienne
peeler to shred cucumber into noodle shape, the seedy middle is my hens
favorite treat.
2. Season cucumber with salt, mix well and
rest for an hour, a lot of liquid will ooze out.
3. Make a sauce using sesame paste (or any
other nut paste) as base, season with curry powder, soy sauce and brown sugar.
4. Squeeze liquid out of cucumber noodle,
add to sauce, add finely cut kaffir lime leaves, mix well, and serve.
