At the Biarritz fish market, the best looking fish is this wild sea bass, shiny silvery. Knowing that I intent to cook on the barbecue, fishmonger advised to keep the scales, easier to keep the moisture in during cooking. 

BBQ wild sea bass

Season with salt for half a day, grill on bbq at medium heat until cooked, not a problem if the scale is burnt, around 15 minutes each side. To serve, remove scale and skin to reveal the juicy white flesh.
