Pork chop with Chasiu sauce

Pork chop with Chasiu sauce

Instead of trying to make Chasiu, which never really looks the same, and sort of loss the flavor of good pork, I simply seared pork chop and add Chasiu marinate as sauce, sort of best of both world.

1. Season pork chop with salt and pepper for a couple of hours.

2. Sear both sides of pork chop until golden, add a sauce made of fermented bean paste, 5 spices powder, rose wine, soy sauce, brown sugar and ginger. Bring to boil and let pork chop cook through to the middle.
