Spicy pear pudding


 

It is the weather (at least in Ireland) for stewed pear with warming spices like cinnamon, ginger and molasses. This pudding has a lot of pear sauce to go with the cake.

 

Pear sauce

4 pears

2 lemons

40gm molasses

cinnamon, ginger, brown sugar, salt

 

cake mix

4 eggs

30gm sugar

pinch of salt

60gm flour

60gm peanut butter (for a softer texture of cake)

1tsp baking powder

1. Cut pear into cubes, cook with molasses, lemon juice, lemon zest, cinnamon, ginger powder, brown sugar and a pinch of salt until soft, pour into a baking dish.

2. Prepare cake mix, spoon on top of pear sauce, bake at 170˚C for 40 minutes.
