Bought from the organic farm Dexter ox heart, a bit surprise to receive a whole one, without being cut up by the butcher first. There is always the first time, really deep red meat of very dense texture, a bit like duck breast.

I season it with soy sauce, pepper, brown sugar, sear it on all sides, then sprinkle roasted sesame on top, pretty good.
