Pork tenderloin with date and miso sauce

Instead of using low temperature method to cook this lean and tender meat, tried baking it in hot oven, for a fast result. Worked well with adding dates in the sauce to thicken it, stayed on the meat to keep it moist.

1. Cut 3 big medjool dates into small pieces, add juice of an orange, season with miso, soy sauce, white pepper, rice wine, mix well and rest, to let date swell and thicken the sauce.

2. Spread thick sauce all over tenderloin, rest on top of some green to provide moisture, or add a few tbsp of white wine, place a few pieces of butter on top.

3. Bake at 200˚C for 20 minutes, rest with oven door ajar for another 10 minutes for a pink result.
