Ireland has very few quota for blue fin tuna, being exchanged for other agriculture related grant. Not sure if this is fare (for the fishermen) but it is the way government choose to influence economics.

Anyway the on-line fishmonger manage to get one once in a blue moon, and hence able to get hold of a piece of tuna belly, the only part I like.

Even though it is fresh enough for sashimi, since it is being transported, I feel safe to cook the outside on charcoal, keeping the middle raw. I could enjoy the melt in the mouth outside part and the crunchy sweet middle.
